Basil + Kale Pesto
An easy go-to family favourite that is endlessly useful to have in the fridge!
Ingredients
To make ~2 cups
1 clove garlic
1/2 cup raw cashews
1/2 cup pepitas
5 stems of kale (leaves only)
Juice of 1 lemon
1 bunch of basil
2/3 cup olive oil
2 tbsp nutritional yeast
1/4 cup pine nuts
Salt to taste (around 1/2 tsp)
Method
Add the garlic, cashews, pepitas, kale and lemon juice to a high powered blender/food processor. Blend on high for 30 seconds or until it has blended down to a coarse pulp.
Add the basil, olive oil, nutritional yeast, pine nuts and salt. Blend until it is all combined - I like to still have some texture to my pesto. Taste and adjust seasoning to your liking.
Serve with some amazing pasta (home-made or bought)
