Basil + Kale Pesto

An easy go-to family favourite that is endlessly useful to have in the fridge!


Ingredients

To make ~2 cups

  • 1 clove garlic

  • 1/2 cup raw cashews

  • 1/2 cup pepitas

  • 5 stems of kale (leaves only)

  • Juice of 1 lemon

  • 1 bunch of basil

  • 2/3 cup olive oil

  • 2 tbsp nutritional yeast

  • 1/4 cup pine nuts

  • Salt to taste (around 1/2 tsp)

Method

  1. Add the garlic, cashews, pepitas, kale and lemon juice to a high powered blender/food processor. Blend on high for 30 seconds or until it has blended down to a coarse pulp.

  2. Add the basil, olive oil, nutritional yeast, pine nuts and salt. Blend until it is all combined - I like to still have some texture to my pesto. Taste and adjust seasoning to your liking.

Serve with some amazing pasta (home-made or bought)
