Perfect, Creamy Porridge
I put this tutorial together on my Instagram story and I couldn’t believe the response. So many people were eating gluggy, dry porridge and never realised how easy it was to make deliciously creamy porridge without any milk or cream.
Serves 2
Ingredients
3/4 cup rolled oats
2 cups water
pinch of salt
1/2 tsp vanilla extract
2 tsp maple syrup
1 tbsp chia seeds + 1/2 cup extra water (optional)
Method
Soak the oats in a medium sized saucepan with 2 cups of water for 20 minutes.
Turn the stove on to medium heat and bring the oats to a simmer. Once simmering, turn down to low and stir frequently for 10 minutes or until thick and creamy (if it gets too thick during this stage, just add a little extra water and stir to combine).
Add in the salt, vanilla extract and maple syrup. Stir to combine.
If using chia seeds, add them to the oats with the extra 1/2 cup of water. Stir and heat for another few minutes until thick and creamy again.
Serve immediately with your desired toppings; I’ve included a list of some of my favourite combinations below for inspiration ↓
PB+J - peanut butter, raspberries + hemp seeds
Salted Caramel - tahini, pinch of salt, finely chopped medjool date, cinnamon + roasted almonds
Banana Berry - banana, blueberries, pepitas, hemp seeds + cinnamon
Spiced Fig - fresh figs, ground cardamom, ground ginger, turmeric (optional) + maple syrup
Apple Pie - grated apple, finely chopped medjool date + cinnamon
Choc Strawberry - fresh strawberries, dark chocolate + toasted coconut
Strawberries + Cream - fresh strawberries, coconut yoghurt, walnuts, ground flaxseed + maple syrup
