Salt + Pepper Tofu Tacos

Serves 3-4 people, depending on how much you love tacos!

Tacos are the perfect vessel for this Salt + Pepper Tofu.

I highly recommend going to the effort of making the Jalapeno + Pineapple Salsa to go with it. You won’t regret it!


Ingredients

  • 500g firm tofu

  • 3 tsp cornflour

  • 1 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp ground coriander (optional)

  • 2 tbsp avocado oil

  • 1 serve of Jalapeno and pineapple salsa

  • 1 serve of Guacamole

  • 1-2 cups red cabbage, finely shredded

  • 12 pack of corn tortillas

Method

  1. Preheat the over to 200°C. Cut tofu into 1.5cm x 3cm pieces.

  2. Mix cornflour, salt, pepper, and ground coriander in a bowl and toss through the tofu until it’s lightly coated.

  3. Spread the tofu on a lined baking tray and drizzle over the avocado oil.

  4. Bake for 10 minutes then flip tofu pieces over and bake for another 10 minutes until golden.

  5. While the tofu is cooking, prepare the Jalapeno and Pineapple Salsa and Guacamole.

  6. Toss the shredded red cabbage through the salsa and let it sit for 5 mins.

  7. Heat a frypan over medium-high heat and heat tortillas in the dry pan one at a time for 15 seconds on each side.

  8. Assemble your tacos and serve.
