Mango + Yellow Curry Rice Paper Rolls

Super fresh and healthy.
Summer weather is the perfect time in Australia for these rice paper rolls, with mangos, mint, coriander and Vietnamese mint all in season.

I used Coles Supermarket Nature’s Kitchen Yellow Curry Tempeh. It’s already marinated for you and it’s so delicious.

If you’ve struggled to get into tempeh before, this is a great recipe to try because the flavour comes mainly from the mango, fresh herbs & yellow curry marinade. Plus, there’s so many other textures that you won’t really notice the tempeh if it has been sliced thinly.

I served mine with some peanut sauce that I had left over from satay burgers, which paired perfectly.

Ingredients

  • 10 rice paper sheets

  • 150g brown rice vermicelli

  • 200g yellow curry tempeh

  • 1–2 cups red cabbage

  • 1 small carrot

  • 1/2 red capsicum

  • 1 lebanese cucumber

  • 1 medium mango

  • 1 cup each of coriander, mint & Vietnamese mint

Method

  1. Cook the brown rice vermicelli according to packet instructions. Rinse with cold water and set aside.

  2. Slice the tempeh into 10 long strips and then prepare the rest of the vegetables. Finely shred the red cabbage. Cut the carrot and red capsicum into matchsticks. Cut the cucumber in half lengthways. Scoop out the seeds with a spoon and then cut into matchsticks. Cut off both mango cheeks and then cup one firmly in your hand and starting at the base, slide the down the lip of a clean glass. This will remove the flesh from the skin in one piece. Repeat with the other mango cheek and then slice them into thin strips.

  3. Take one sheet of rice paper and dip it in a bowl of cold water until all of it has been submerged. Remove and let any excess water drip off. Place on a chopping board and begin assembling immediately.

  4. Place down a few of each of the herbs followed by a strip of mango, a small handful of red cabbage and vermicelli, two strips of the carrot, red capsicum and cucumber, and a strip of tempeh.

  5. To roll, fold the closest edge over the filling. Then fold the two side edges toward the middle and roll up firmly. See assembly video below for a visual.

Serve with a peanut or sweet chilli sauce.
